This course provides the students with a basic knowledge of food chemistry focusing on the food macro-nutrients and micro-nutrients. In relation to that an overview of food components such as moisture content, carbohydrates, proteins, lipids, enzymes, natural pigments, flavor compounds and contaminants are also studying during this course. Principles of food processing, quality assurance and legislation and food laws related to food industry are some of the learning objectives of this course.
